Warm Orzo Salad with Crab, Roasted Red Peppers & Baby Lettuce
Featuring: A Pretty Good Farm Gourmet Salad Mix
2 cups orzo pasta
5 oz canned chunked crab meat, drained
1 cup thinly sliced roasted red pepper
2 cups A Pretty Good Farm Gourmet Salad Mix
Zest and juice of 1 lemon
2 tbsp olive oil
1 tbsp El Rudo Gourmet Salsa Macha
Handful of fresh basil leaves
Cook orzo pasta according to package instructions and strain well.
While orzo is still warm, toss with crab meat, roasted red peppers, salad mix, lemon zest and juice, olive oil, salsa macha and basil. Season to taste with salt and pepper. Serve warm, at room temperature or cooled.
