Bacon Rarebit

Featuring: Durham Cheesemaker 

1 tbsp butter 

1 small shallot, finely diced 

1 tbsp all-purpose flour 

1 1/4 cups 3.25%MF milk 

1 tsp Sarafino Chili Mustard 

1 tsp Worcestershire sauce 

2 cups cubed Durham Cheesemaker’s Own Cheese* 

4 pieces thick cut bacon, cooked

2 thick slices crusty bread, toasted 

Chopped chives for serving 

  • Place a small sauce pot over medium heat. Add the butter and shallot and cook for 3-5 minutes, or until shallots have softened. Add the flour and cook for an additional 3 minutes, or until fragrant. Increase the heat to medium high, and add the milk while continually whisking. Whisk until sauce has thickened and remove from heat. Stir in Dijon, Worcestershire, and cheese. Season to taste with salt and pepper. 

  • Top each slice of bread with two pieces of bacon and generously pour the cheese sauce overtop. Top with chives and serve immediately.

*Please note - Peter’s cheese is currently not for sale. Substitute cheese with Camembert or Brie.
