Sweet Pea Sipper

Featuring: Urban Farm Microgreens

1 cup Urban Farm Microgreens Pea Shoots 

1 bunch fresh basil 

1 oz gin 

1 oz simple syrup 

3 oz Fever Tree Lime & Yuzu Sparkling Soda 

Pea shoot and lime wheel for garnish 

• Bring a small sauce pot of water to a boil, add pea shoots and basil and blanch for 30 seconds, then transfer to an ice bath to cool. 

• Place blanched pea shoots and basil in a blender and blend with 1/2 cup water until smooth, then pass puree through a fine mesh strainer. 

• To a glass filled with ice, add 1 oz of the pea and basil purée, the gin, and simple syrupand stir to combine, then top with soda, garnish with a pea shoot and lime wheel and serve immediately. 

Makes 1 drink
