Vanilla Bean Buzz

1/3 cup Villa Vida Loca Farm Vanilla Bean Honey
1/3 cup water
4 thyme sprigs, plus 2 sprigs for garnish
1 oz freshly squeezed lemon juice
1 1/2 oz rye whiskey
1 thinly sliced lemon wheel
● Begin by making the simple syrup. Combine honey and water in a small saucepan over high heat. When mixture comes to a boil, reduce heat to medium and add in 4 sprigs of thyme. Simmer for 2 minutes, then remove from heat and allow thyme to steep in the syrup for 15 minutes before removing and discarding. Let syrup cool completely before using. (Refrigerate unused syrup and use within 2 weeks).
● To a cocktail shaker filled with ice, add 1 oz of the simple syrup, lemon juice and whiskey. Shake until completely chilled, about 2 minutes. Pour into a rocks glass filled with ice. Garnish with remaining 2 thyme sprigs and lemon wheel and serve immediately.
