Urban Farm Microgreens Pea Shoots 1 cup
fresh basil 1 bunch
gin 1 oz
simple syrup 1 oz
Fever Tree Lime & Yuzu Sparkling Soda 3 oz
Preparation

Bring a small sauce pot of water to a boil, add pea shoots and basil and blanch for 30 seconds, then transfer to an ice bath to cool.

Place blanched pea shoots and basil in a blender and blend with 1/2 cup water until smooth, then pass puree through a fine mesh strainer.

To a glass filled with ice, add 1 oz of the pea and basil purée, the gin, and simple syrupand stir to combine, then top with soda, garnish with a pea shoot and lime wheel and serve immediately.
