Sour Ale Granita

A grown-up frozen treat that transforms sour ale into icy shards of refreshment. Tart, effervescent, and lightly bitter, it's an unexpected palate cleanser, an excellent topper for fresh oysters or a playful dessert finale.

Town Brewery Salad Bar Suplex Sour 1 can
Villa Vida Loca Honey 1/4 cup
lime zest 1 tsp

Preparation

  1. Whisk together beer, honey and lime zest in a large baking dish (mixture should not come any higher than 1 inch up the side of the dish) and set, uncovered, in the freezer for 45 minutes, or until the edges are frozen and the center is slushy. Use a fork to gently scrape the frozen edges into the center, then place back in the freezer for an additional 45 minutes. Repeat this process 4 times, or until granita is completely frozen and ice crystals are all separate. Serve immediately on top of vanilla ice cream, freshly shucked oysters or simply on its own with crushed blackberries.
