Soy Marinated Duck Eggs

Inspired by Japanese ramen culture, these glossy, umami-packed eggs are steeped in soy and aromatics. Their custardy yolks and savoury edge make them perfect for bowls, salads, ramen or as a refined snack.

soy sauce 3/4 cup
water 1/2 cup
seasoned rice vinegar 2 tbsp
Villa Vida Loca Pure Honey 1 tbsp
Hurt Berry Farm Duality Hot Sauce 1 tsp
star anise pod 1
fresh ginger, sliced 1 inch piece

Preparation

  1. Add soy, water, vinegar, honey, hot sauce, ginger and star anise to a small sauce pot over high heat and bring to a boil, then transfer marinate to a mixing bowl and cool completely.

  2. Meanwhile, bring a medium sauce pot filled with water to a gentle boil and, using a slotted spoon, gently add eggs one at a time to ensure they do not crack. Cook eggs for 9 minutes then, using a slotted spoon, transfer to an ice bath to cool completely.

  3. Peel cooled eggs, add to reserved marinade, then place a small plate on top to completely submerge them before refrigerating for 3 hours to marinate.

  4. To serve, cut marinated eggs in half and use to top ramen, noodle dishes, salad, toast, or to simply enjoy on their own!
