Place a 25 cm (10-inch) cast-iron skillet in the oven or BBQ and preheat to 260 °C (500 °F).

Heat olive oil in a medium saucepan over medium-high heat. Add garlic and tomato paste; cook for 3–4 minutes, or until fragrant and slightly caramelized.

Add white wine and bring to a simmer. Add mussels, cover, and cook for 5–6 minutes, or until shells open. Remove from heat and cool completely.

Discard any mussels that remain closed, then remove the rest from their shells.

On a lightly floured surface, roll or stretch dough to fit the skillet. Carefully remove the hot skillet and lay the dough inside.

Spread pizza sauce evenly, then top with mussels, crumbled sausage, red onion, oregano, and chili flakes. Drizzle with olive oil.

Bake 8–12 minutes, or until crust is golden and pizza is cooked through.

Slice and serve immediately.
