Mussel and Fennel Sausage Pizza

This pizza layers coastal and countryside flavours in one bite. Briny mussels, fennel sausage, and red onion come together on a blistered crust with a hint of spice. It's rustic, bold, and best enjoyed hot from the skillet with a glass of chilled white wine.

garlic, crushed 2 cloves
tomato paste 1 tbsp
dry white wine 120 mL (½ cup)
fresh mussels, cleaned 225 g (½ lb)
store-bought pizza dough 1
pizza sauce 250 mL (1 cup)
fennel sausage, casing removed 1
red onion, finely diced ½ cup
dried oregano ½ tsp
dried red chili flakes ½ tsp

Preparation

  1. Place a 25 cm (10-inch) cast-iron skillet in the oven or BBQ and preheat to 260 °C (500 °F).

  2. Heat olive oil in a medium saucepan over medium-high heat. Add garlic and tomato paste; cook for 3–4 minutes, or until fragrant and slightly caramelized.

  3. Add white wine and bring to a simmer. Add mussels, cover, and cook for 5–6 minutes, or until shells open. Remove from heat and cool completely.

  4. Discard any mussels that remain closed, then remove the rest from their shells.

  5. On a lightly floured surface, roll or stretch dough to fit the skillet. Carefully remove the hot skillet and lay the dough inside.

  6. Spread pizza sauce evenly, then top with mussels, crumbled sausage, red onion, oregano, and chili flakes. Drizzle with olive oil.

  7. Bake 8–12 minutes, or until crust is golden and pizza is cooked through.

  8. Slice and serve immediately.
